This is a chardonnay fermented on viognier lees. Its a bright pale yellow colour with green reflections. Aromatic nose, nice intensity. Spices and ripe fruits like banana and exotic fruit. On the palate this wine is full bodied and well balanced, it reflects the aromas with a subtle mix of vanilla and fruits.
Cotes Catalanes vines are grown next to the shores of the Mediterranean, on deep rocky soils. The vines are on trellis and bush vines. Fermentation occurs in burgundian new barrels for 20% of the wine. Ageing and batonnage of fine lees over 3 to 6 months.
The intensity of fresh fruit and the vanilla touch of the Cadireta will get exalted by a cheese or cold meats board. It will also pair perfectly with paella, oven sea bream or a curry chicken.
