This wine is made from 100% Sauvignon Blanc, grown on a mosaic of soils—Caillottes (limestone), Terres Blanches (clay-limestone), and Silex (flint)—across the villages of Bué, Vinon, and Sury-en-Vaux. The Crochet family, rooted in the village of Bué, has been producing wine for generations, and this cuvée reflects their commitment to terroir and precision.
Appearance:
Pale straw with green highlights. Bright and youthful.
Nose:
Vibrant aromas of grapefruit, green apple, and Asian pear, with hints of white flowers, fresh herbs, and crushed stone. A touch of flint and citrus zest adds lift.
Palate:
Dry, crisp, and elegant, with racy acidity and a fine mineral backbone. Flavours of lime, quince, and gooseberry are layered with subtle notes of ivy, boxwood, and chalk. The finish is long, clean, and refreshing.
Vinification:
Grapes are hand-harvested and fermented in temperature-controlled stainless steel tanks to preserve aromatic purity. Aged on fine lees for added texture and complexity. Minimal intervention to highlight the character of each vineyard site.
Pairing:
Ideal with goat cheese (especially Crottin de Chavignol), oysters, grilled fish, or asparagus. Also excellent with sushi, citrus-based dishes, and fresh salads.
