Dot Brew, based in Dublin, has built a reputation for experimentation with barrel aging. Their Collaboration Barrel Aged Stout Collection brings together three unique stouts, crafted with input from Liath Restaurant, Imbibe Coffee Roasters, and The Proper Chocolate Company.
What’s Inside the Collection
The OG (8.5%)
- Originally brewed for Liath’s “Sense” collection.
- Built from 11 different malts and aged in American oak.
- Deep roasted malt character with nutty aromatics.
The Double (9.3%)
- A portion of The OG transferred into bourbon barrels
- Accented with Ugandan Semuliki Forest cocoa nibs from Proper Chocolate and a touch of lactose.
- Velvety mouthfeel with milk chocolate and vanilla sweetness.
The Coffee Edition (~8.7%)
- Aged to highlight Imbibe Coffee’s Brazilian Boa Sopa beans.
- Displays soft hazelnut aroma and roasted coffee depth.
Pairings
This collection is perfect for dessert pairings (chocolate cake, tiramisu), cheese boards (blue or aged cheddar), or simply as a slow sipper by the fire. Each stout highlights a different artisan collaboration, making it as much about storytelling as flavour.
