A simple grist using Heritage barley & oats was mashed and transferred to Sauvignon Blanc Oak casks where it fermented & aged for 27 months with wild yeast captured at Lisnagara Woods in Muff. Sweet & Dry with a clean & gentle tartness. Expect flavours of white grape, oak and a hint of honey.
