Ube Miraflores

A unique unfortified white wine from Sanlúcar de Barrameda, Spain, crafted by Ramiro Ibáñez of Cota 45 from 100% Palomino Fino grapes. Sourced from various plots in the Pago de Miraflores, this wine is aged for eight months in old Sherry botas, including a period under flor. It features a vibrant profile of green apple, citrus, and floral notes, underpinned by a distinct chalky minerality and a savoury, saline finish characteristic of the region's albariza soils. On the palate, it is fresh and elegant with a creamy texture and balanced acidity.
